Stephanie, we are using both SD and HD modulation and then with our building wiring distributing the signal to tvs that tune to the various channels we modulate.
We have been demoing the zeevee boxes with some really good success:

Also, if you are looking to stream over IP internal on the LAN we have had some surprisingly good success with the Marshall VS102 http://www.fullcompass.com/product/405400.html
Works really well on the LAN... we are still tweaking things trying to get it to work site to site.

A third option I am looking at is a hybrid..  in situations where you don't have a coax CCTV infrasturture to use you can Modulate the signal from the auditorium *using a product like the zeevee* and then using a box like the HDHomeRun tuner<http://www.silicondust.com/products/hdhomerun/hdhomerun-tech3-industrialcommerical/> to stream to computers with the driver installed or Media Center installed.... Note their Tech version is multicast (streams one to many receiving devices) their consumer line isn't

We are, Stephanie... kinda.  We're using a RF modulator to in-house CATV.  But to get the feed from the broadcast room to the modulator, we are using a CAT5E video extender (around 300 ft run).  This is made by ChannelPlus (SVC-10).

If you want to swing down here sometime, I can show you the setup.
