We have 2 mini's running OSX server. Makes for really nice print server for macs plus install printopia ($19) and iOS devices can AirPrint to your network printers.
We also do a little OSX image deployment with them as well.
Apple has made it obvious they don't care about enterprise customers … so I predict OSX server will go away at some point just like the Xserve

Thanks for the update Ryan! I like Ubuntu too. The free Ubuntu auto-updates work great. Maybe over time Apple with get their act together in the server department.

Very, very regrettably, OS X Server, is becoming less and less viable for us. We are moving away from it. And I have for years been begging for the ability to run OS X on ESX.
Why moving away from OS X?
* AD domain integration has always been weak, unreliable. Even worse now with Lion.
* Windows File-Sharing Protocol broken with Lion Server. (Replaced samba.)
* MySQL no longer installed/maintained by Apple. (They switched to postgres.)
* They don't patch their open source stuff soon enough. (e.g., samba, mysql, php, apache, etc.)
After many years of fairly happy LAMP-stack service and fairly unhappy years of file-sharing services, we feel forced to move to ubuntu for our linux-y stuff, and putting the few file-server resources back to Windows.
All that said -- if you're really needing what OS X Server does best (podcast producer, Mac/iOS Device Management, etc.) -- it may be just the ticket. Our mail services have been fine too. But for a general purpose server (and I'm something of an Apple fanboy) -- I can't recommend OS X Server.
