You might check out CloneZilla.  It has the ability to communicate with
hardware raid controllers (at least DELL Perc Controllers) and it has all
kinds of options including making snapshots and differential snapshots and
storing them on a NAS or USB drive.  It understands lots of file formats
including NTFS, ext2,3,4 and VMFS.
